Squash fritters In our household these were made with yellow crookneck squash, plentiful from the garden. Zucchini is often used today. 2c or more grated squash (let drain 1/2t salt (in colander 2t sugar (for abt 1/8t pepper (15 min.) 1-2 eggs, beaten add squash to bowl 1/2c flour & 1/2t baking powder per egg add depending on liquidity of mixture, add up to 1/2c more flour and 3-7T milk. Traditionally fried in Crisco. (Can be cooked on a pancake griddle.) Serve spread with butter or margarine.
