Recipe from Betty Hudson 1 Quart Fresh Oysters with their Juice 2 eggs 1/2 cup flour less a tbsp or so 1/2 tsp baking powder Salt and Pepper to Taste Beat the eggs well. Stir into the oysters. Sift the flour and baking powder together and add to the oysters with salt and pepper. Mix well. Heat about 1/8 inch of Crisco in a pan or griddle until moderately hot. Ladle the oyster mixture into the pan making cakes with 5 or 6 oysters in each. They should sputter a little. Brown on each side turning once. Serve hot with ketchup on the side. *Note: Oysters freshly shucked are the best because you can save the juice. Commercial oysters have been washed. The fire department used a lot more fat or oil to fry theirs and served them between slices of bread as a sandwich. With ketchup to taste. With thanks to sister Betty, Ken Bunting
